HELLO... I'm alive... I'm just a really terrible blogger! In truth life has been difficult as of late. Not just because Paraguay isn't my cup of tea and the move was not the most organized (on part of the military not us), but because my health has been going steadily downhill while my weight has been going steadily UPhill. That never helps ones mental state. So, to break out of this rutt I've decided to do the Whole 30 Challenge. And, to make sure I stick to it, I'm going to post here. Everyday. I'm not saying it will be the most interesting blog in the world but if I have to put it out there for the whole world to see, ya know if they find the blog, then I'm gonna stick.to.it! Wish me luck!!!
Oh, you wanna know what the whole 30 challenge is? Well, in a nutshell, it's eating clean. As in nothing processed and no foods known to cause allergies. Kinda like an elimination diet. The point is to find out which foods inflame YOUR, in this case MY, body in particular. So that means all the vegetables and beef, chicken, seafood I can eat, plus a small amount of fruit. There is NO DAIRY, NO SOY, NO SUGAR, NO GRAINS, NO LEGUMES, NO POTATOES, NO ALCOHOL or SMOKING, and NO PROCESSED MEATS (sausage, bacon, prepackaged deli meats). That's a lot of NO's! And because I have an autoimmune disease that also means no nightshades (tomatoes, eggplant, peppers) and no, gulp, coffee. Sniff.
The good news is that I found an "herbal coffee" which doesn't taste like coffee at all but is quite tasty. I paired it with some coconut cream, due to no dairy or soy, and it was delish!
So for today I had:
Breakfast: Herbal coffee and coconut cream and left over chicken with chinese cabbage and carrots.
Lunch: Smoothie of frozen banana, 10 almonds, 1/2 c shredded coconut, 1 Tbs of Maca, and 1 Tbs of cocoa powder. Unbelievably good!
Dinner: I made tilapia with lime, garlic and cilantro paired with guacamole and mashed cauliflower but in truth that smoothie made me SO full I couldn't eat. Crazy right? I think it must have been all the fat from the almonds and coconut but it's now 7:30 and the thought of food is still so gross to me.
